The famous Kimami vermicelli from Varanasi is once again preparing to spread sweetness across markets during the upcoming Eid season. Despite tensions in the Middle East, traders in the city have begun large-scale production of the traditional sweet vermicelli, which will eventually reach countries such as Saudi Arabia and the United Arab Emirates.

The vermicelli is prepared in the well-known Bhadau Chungi Sevai Market near Rajghat Bridge. This market is believed to be over 150 years old and is famous for producing several varieties of sevai, including the highly popular “Triple Zero Kimami Sevai.”

Local traders say preparations for Eid begin nearly three months in advance. Around 45 to 50 small factories operate in the market, producing sevai throughout the year. However, production significantly increases ahead of Eid as demand rises both in India and abroad.

According to traders, vermicelli produced in Varanasi is first sent to Maharashtra, from where exporters ship it to Middle Eastern countries. The product is also supplied to several Indian states and cities, from Kerala to Jammu.

Industry representatives say the Eid season alone generates business worth nearly ₹15 crore in the market, while the total annual turnover exceeds ₹20 crore. The vermicelli is made using simple ingredients such as refined flour and water, but the traditional technique and craftsmanship passed down through generations give it a unique taste and texture.

Despite challenges such as rising raw material costs and humid weather affecting production, traders remain confident that Kashi’s famous Kimami sevai will continue to carry the city’s culinary tradition to global markets during the festive season.
